NI’s Big Breakfast:  Ulster Fry at the Errigle Inn

Breakfast is the most important meal of the day.

Well, that is until you get hungry again. Breakfast is the meal that sets you up for the day; it can make or break your mood. I have had many a cranky day due a pitiful half bowl of Cornflakes early on.

Remembering those lost during a visit to Auschwitz-Birkenau

Holocaust Memorial Day is on January 27, the date Auschwitz-Birkenau was liberated in 1945. I visited the camp complex in 2010; it was a surreal experience.
